Do i need to beat him or wear him out, If i already beaten maat before?

I'm pretty sure you can do it either way, battle Maat on your WHM or do it survival style. A win is a win.

The question seems a little confused to me. At face value; if you have beaten Maat before on another job, your path to 75 on any subsequent job is clear of any level restrictions.*

As for fighting Maat on WHM, you don't need to defeat him by means of dealing damage, though that option is open to you should you choose it. The more popular (and somewhat easier) strategy is to simply let him hurt you and cure yourself. After you've cured yourself for a set amount (I really can't recall the figure, it's been 4+ years now, but I'll take a stab at 3000 HP) he gives up.

*NB: Bear in mind this only applies to the jobs that actually fight Maat for the level cap. ToAU/WoTG jobs fight someone else entirely.

If I am not mistaken, beatting him down shouldn't be that hard. Sleep Pots + Opo Ope Necklace for 300 TP, a TP wing and Sushi or Meat should do the trick. Use Black Halo to start off with, pop the wing and then finish with Hexa Strike to close a light SC. Should do a decent chunk of damage. I've heard of WHMs doing that, even a good friend won with melee and said it was easier then when she attempted and failed just trying to stay alive which at the time was expensive. It just requires having capped club and Black Halo quested though.

Stine wrote a very nice piece on WHMaat in the WHM section of these boards. A good read if you are going to go with the "Try to not die" route.

Actually WHM Maat is survival, if I remember right you have to live for 5 minutes, not about damage taken, since that varies by a lot. It's been quite a while since I fought him myself but I'm pretty certain that's what it is.
