RPG-wise you've got:
The Shadow Hearts series (1, 2, 3) has enough adult humor and good gameplay to challenge any RPG series I've ever played.
Final Fantasy X and X-2 are both solid (X being more-so IMO) RPGs with good storylines and battle systems.
Xenosaga 1 & 2 are the storyline fanatic's wetdream. If you can make it passed the hours (not lying) of cutscenes you'll find a very stable (though not fantastic) battle system to go with the amazing storyline.
Suikoden V (as Aly has already said) is the completists wetdream. Solid game, Just solid. ^^
Disgaea Hour of Darkness is a hilarious and well-build tactical RPG that'll keep the completists going for hours and hours just like Suikoden.
As far as non-RPGs go. Resident Evil 4 is the best Resident Evil (coming from a big fan of the series, though its really not everyone's cup of tea) and last years game of the year bar none. God of War and the Devil May Cry (minus DMC 2) are solid, solid series with very adult tones (and violence to match ^^) and humor.
Fighting game wise, I'd go with either Soul Caliber 3 or Tekken 5. SC3 is a solid weapons based fighter whereas Tekken 5 is the cheaper (though just as fun) hand-to-hand fighter.
Personally, I wouldn't buy anything without taking a look at the PS1 library as well. Xenogears, Crono Trigger (rereleased), a myrid of Final Fantasys and many many more that could be picked up.
Edit:
I remember buying Guitar Hero now and I think my father ended up playing it more than I did...
Edit 2:
Star Ocean: Til The End of Time FTW! For twenty bucks and 100+ hours of gameplay (for me) this one takes the cake as one of my favorite RPGs ever. I'm pretty upset that I forgot it. ^^ I think you could literally play it forever....
