I saw Steve Martin while on vacation in Venice (yes, Italy). My dad got him on tape trying to hide from us taping him, haha.
I met an asston of people while working at a Mail Boxes Etc. near the Hancock building in downtown Chicago. We were the closest place to all the fancy hotels on Michigan Avenue that everyone stays at, so we had a few notables wander in. Among them:
Linda Fiorentino (Dogma and Men in Black) came in to buy a bunch of boxes. I didn't recognize her til I rang up her credit card, she's actually shorter than me IRL (maybe 5'2" at most). We chatted about Kevin Smith while I waited for her card to go through, and she promised me an autographed photo of herself and Smith for my little sister, but never delivered. ;_;
Ernie Banks (aka Mr. Cub) was a regular customer, with a rented mailbox at our address. We shipped a lot of stuff to his Florida home for him, and I still have some of the autographed cards he gave me.
Norm Van Lier is another regular customer- he was a former Chicago Bull player, and does sports commentary for Fox. He came in one day while me and my co-worker (who basically had the run of the place) had a makeshift basketball hoop made of a cardboard box taped to the wall, and were throwing a ball made of a plastic bag wrapped in packing tape into it. Norm joined in and played with us for a few, so in a way you can say I shot hoops with a former Chicago Bull, haha. He always called me "baby girl" too, which still makes me giggle.
Ditka (aka DA COACH) came into the store once, and promptly left to let his wife handle his business while he waited outside in his Escalade, lol. She had the biggest rock I'd ever seen in my life . . .
And although I never met them in person, I also got to pack up personal belongings from Billy Joel and AC/DC as well. Billy Joel's stuff were birthday gifts he'd recieved at his party in Chicago, he was sending them home to New York. We read all the cards.

For AC/DC, we packed a guitar the whole band had signed, and was sending to a charity auction. My co-worker Nick was a huge AC/DC fan and a good guitar player, he jammed a little bit on it before we packed it up, lol. Played Back in Black, naturally.
