The only difference between UT and Quake, Doom, XIII, F.E.A.R and all its peers is you can basically, BASICALLY, fly. Other than that and for all FPS games... FPS = FPS = FPS, show me a difference and I'll show you two similarities.
Each game has piles of little differences. Little variations in physics. Different pacing. Different weapon balance. Little nuances in the net code.
UT99 and 2004 are a little faster paced than Quake3, for example - UT2003 took on a more Q3A like speed and turned off a lot of fans. Check a lot of message boards and reviews of 2004, they will all bring up the restored game speed compared to 2003 and 99.
DOOM is more simplistic, being planar and having very limited weaponry. Basically, classic DOOM deathmatch was a careful dance around the most powerful weapon spawns, where once someone picked up the best weapon, they had to maintain ammo while hopefully barring their opponent(s) from picking up anything that could compete. Aiming was somewhat easier with the lack of vertical freelook.
DOOM3 is extremely slow paced compared to most of the others based on limited single player play, though I admit to having very little experience with DOOM3 deathmatch.
Counter-Strike has a semi hidden and difficult to learn recoil system, which makes aiming take a lot more practice than many other FPS. Shooting while running is basically futile with all but the most steady and practiced eye. You can really tell in CS who's a pro and who's a scrub, much moreso than nearly any other FPS I've ever played.
Tribes has a carefully designed netcode that makes it fairly balanced up to almost 300 ping, and gives everyone a jetpack and the ability to fly - but the high mobility comes with a high price, as projectile weapons actually veer off somewhat from the crosshair based on your movement (Tribes2 is very precise about this and it takes a hell of a lot of practice to be able to shoot other fliers from the air).
These are just some examples of the nuances that make FPS games unique. Oh, and it really isn't fair to say that you'll point out similarities
between games of the same genre.. I mean, damn, I can point out a million similarities between FF7 and Star Ocean 2, doesn't mean they play the same.
